Aromatic Mesophilic Culture - Flora Danica

Flora Danica is a mesophilic type, aromatic culture that adds a delicious, buttery taste to any soft cheese such as Chevre, Goat cheeses, Havarti, Gouda, Edam, Camembert, Brie, Feta, Blue, Buttermilk, Sour Cream, Cream cheese, Havarti, Gouda, Edam, Creme Fraiche and Cultured Butter.

Paula's go to additional culture for Irish Butter! One pinch Flora Danica combined with 1 pinch MM100, per Quart of heavy cream!

The culture will also produce a small amount of carbon dioxide gas and is therefore a good culture choice when a lighter texture cheese is desired.

CULTURE INCLUDES: (LL) Lactococcus lactis subsp. Lactis,(LLC) Lactococcus lactis subsp. Cremoris,(LLD) Lactococcus lactis subsp. lactis biovar diacetylactis,(LMC) Leuconostoc mesenteroides subsp. cremoris

USAGE: When using this aromatic culture as a direct set use 1/8 teaspoon per gallon of milk. IN ADDITION, add your standard culture, such as MM100 (our traditional Mesophilic culture) at a rate of 1/8 teaspoon per gallon. Aromatic cultures are NOT potent enough to use alone in most recipes!!

STORAGE: Store in the freezer. Will keep up to 2 years if stored properly.
