College and NFL opening weekend is here, and there is no better way to celebrate than with a snack spread built around cheese you made yourself. These five recipes are hearty, shareable, and guaranteed to disappear before the first quarter is over. No complicated techniques, no hard-to-find ingredients. Just real food made from scratch, the way it should be.
Whether you are hosting a houseful or keeping it low key on the couch, these bites make every game better.
Fresh Mozzarella and Roasted Tomato Bruschetta
Late summer tomatoes at their peak on toasted bread with creamy homemade mozzarella
Prep: 15 minutes | Cook: 20 minutes | Serves: 8–10
Ingredients
- 1 pint cherry tomatoes, halved
- 3 tbsp olive oil, divided
- 2 cloves garlic, halved for rubbing
- 1 baguette, sliced and toasted
- 8 oz homemade mozzarella, sliced thin
- Balsamic glaze, fresh basil, flaky salt, and black pepper
How to Make It
- Toss cherry tomatoes with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast at 400°F for 18 to 20 minutes until soft and slightly caramelized.
- Toast baguette slices under the broiler until golden. Rub each slice with the cut side of a garlic clove while still warm.
- Layer mozzarella slices on each toast, spoon roasted tomatoes on top, and finish with a drizzle of balsamic glaze and torn fresh basil.
Tip: Roast the tomatoes up to a day ahead and store in the fridge. Bring to room temperature before assembling so the mozzarella does not get cold and rubbery.
Baked Feta with Honey and Chili Flakes
Warm, salty, and sweet with just enough heat to keep things interesting
Prep: 5 minutes | Cook: 20 minutes | Serves: 8–10
Ingredients
- 8 oz homemade feta, kept as a whole block
- 3 tbsp good quality olive oil
- 2 tbsp local honey
- 1/2 tsp red chili flakes
- Fresh thyme sprigs
- Crusty bread, pita, or crackers for serving
How to Make It
- Place the feta block in a small baking dish or oven safe skillet. Drizzle with olive oil and honey, then scatter chili flakes and thyme sprigs over the top.
- Bake at 400°F for 18 to 20 minutes until the feta is soft, golden at the edges, and starting to bubble around the sides.
- Serve immediately straight from the dish with plenty of crusty bread or pita for scooping.
Tip: Your homemade feta will be creamier and fresher than store bought, so it softens beautifully in the oven rather than drying out. Do not overbake. Pull it when it just starts to turn golden and serve right away while it is still warm and scoopable.
Ricotta and Fig Crostini with Honey and Walnuts
The elegant option that always surprises people at a game day spread
Prep: 15 minutes | Cook: 8 minutes | Serves: 8–10
Ingredients
- 1 baguette, sliced thin and toasted
- 8 oz homemade ricotta
- 6 to 8 fresh figs, quartered (or dried figs, halved)
- 3 tbsp local honey
- 1/3 cup walnuts, roughly chopped and lightly toasted
- Fresh thyme leaves, flaky salt
How to Make It
- Toast baguette slices in a 375°F oven for 7 to 8 minutes until crisp and golden.
- Spread a generous spoonful of ricotta on each crostini.
- Top with a fig piece or two, a drizzle of honey, a scatter of toasted walnuts, and a pinch of fresh thyme and flaky salt.
Tip: Toast the walnuts in a dry skillet for 3 to 4 minutes until fragrant. It makes a noticeable difference in flavor and is worth the extra step.
Sweet Corn and Queso Fresco Skillet Dip

Prep: 10 minutes | Cook: 15 minutes | Serves: 8–10
Ingredients
- 4 ears fresh corn, kernels cut off (or 3 cups frozen corn, thawed and patted dry)
- 2 tbsp butter
- 1 jalapeño, seeded and finely diced
- Juice of 1 lime
- 1/2 tsp cumin
- 6 oz homemade queso fresco, crumbled
- Fresh cilantro, salt, and tortilla chips for serving
How to Make It
- Heat a cast iron skillet over high heat until very hot. Add butter and corn in a single layer. Do not stir for 2 to 3 minutes to let the corn char and caramelize. Stir once and let sit again.
- Add jalapeño and cumin and cook another 2 minutes.
- Remove from heat and squeeze lime juice over everything. Season with salt.
- Transfer to a serving dish, crumble queso fresco generously over the top, and scatter fresh cilantro. Serve warm with tortilla chips.
Tip: High heat and patience are the keys here. Resist stirring too early and you will get that beautiful char that makes this dip stand out.
Whipped Goat Cheese Dip with Roasted Garlic and Herbs
Creamy, tangy, and made for dunking everything on the snack table
Prep: 10 minutes | Cook: 40 minutes | Serves: 10–12
Ingredients
- 8 oz homemade goat cheese, at room temperature
- 4 oz cream cheese, softened
- 1 whole head of garlic
- 3 tbsp olive oil, divided
- 2 tbsp fresh chives, finely chopped
- 1 tbsp fresh thyme leaves
- 1 tsp lemon zest
- Salt and black pepper to taste
- Pita chips, crostini, sliced baguette, or raw vegetables for serving
How to Make It
- Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tbsp olive oil, wrap in foil, and roast at 400°F for 35 to 40 minutes until golden and completely soft. Let cool slightly then squeeze the cloves out.
- In a food processor, combine goat cheese, cream cheese, roasted garlic, remaining olive oil, lemon zest, salt, and pepper. Blend until smooth and fluffy, scraping down the sides as needed.
- Transfer to a serving bowl and top with fresh chives, thyme, a drizzle of olive oil, and cracked black pepper. Serve with pita chips, crostini, or vegetables.
Tip: The roasted garlic can be made a day ahead. The dip itself keeps in the fridge for up to 3 days and actually gets better as the flavors come together. Pull it out 20 minutes before serving so it softens back up.
